Wings on Offer: BBQ sweet & sour CHICKEN WINGS, farm house ranch. Wings that have been brined overnight in salt, sugar, water, garlic, citrus and herbs. Smoked for 3 hours before being cooled and cut. Tossed in a sauce made with chilli oil, Hanks hot sauce, fruit syrup and lemon juice. Finished on the chargrill after being glazed (this glazing and charring happens twice).Served on yoghurt ranch (ranch with slight acidity from yoghurt) to contrast the glaze. Comes with some sticks of pickled celery.

Twice cooked southern fried DUCK WINGS, Nashville style! Confit in smoker, cooled then dredged through flour seasoned with garlic, onion and black pepper. Deep fried and tossed in a seasoned oil made from the confit fat and finished with cayenne chilli powder. Spicy.
